Recently, my husband and I enjoyed a wonderful waterfront lunch at a local restaurant...it was a really hot day and all we ordered was a big bowl of cold peel and eat shrimp with cocktail sauce. It was so refreshing and delicious we decided to go home and make it for dinner later that week.

Spicy Peel and Eat Shrimp Cocktail
1 pound bag large frozen easy peel shrimp (uncooked)
1 shrimp boil seasoning bag (such as Old Bay)
Extra hot cocktail sauce
Fresh grated horseradish
Cajun seasoning (such as Zatarans)
Fill a large pot with water and add seafood boil seasoning bag and half a lemon.
Bring water to a rolling boil.
Add shrimp and cook approx 3-4 minutes until just pink and cooked through.
Drain and chill shrimp in refrigerator 4 hours or longer.
Mix together cocktail sauce and fresh grated horseradish- add to taste- (we like ALOT of fresh horseradish!)
Top chilled shrimp with a sprinkle of Cajun seasoning and a few slices of lemon, serve with chilled cocktail sauce.
I like to chill the shrimp IN the serving bowl so the bowl stays cold too...you can also add a few icecubes on top of the chilled shrimp.
