For the next few weeks, with school is back in session and our schedules getting busier, I am featuring a series of easy fix-and-freeze weeknight meals to help make getting dinner on the table easier!
I personally LOVE fix-and freeze meals (ok, I'll be honest, I love anything that makes my life easier). Now that the kiddos are back in school, I need really fast and convenient meals for our busy weeknights.
Big batch fix and freeze meals are a great way to go! Recently, I purchased large quantities of our favorite proteins (I found that this is what usually takes the longest to cook, so if those are ready in advance a meal comes together MUCH faster!)
I bought ground beef, ground turkey, pork roast, shrimp, rotissere chicken, and boneless skinless chicken breasts. I also purchased several of our favorite sauces, seasonings, and marinades to prepare everything.
First up, is the ground beef. Here's what I like to do:
We are a classic American family who loves our burgers, so MOST of the ground beef gets rationed into burger and slider patties.
(By the way, I like to substitute ground turkey for ground beef when making tacos or spagetti sauce, but I have TRIED using ground turkey for burgers, and for me it's just not as good- so, if anyone has a delicious recipe for turkey burgers that are moist and flavorful, please share! Mine always turn out dry.)
Whenever I make burgers, I like to use the handy-dandy burger presses- the burgers turn out so nicely that way!
I also always use Cajun Seasoning on the meat- it's soo yummy!
I also have this great "slider" press which makes the most adorable little sliders!
Just fill the press with meat and push the lid down to form perfect little patties.
This time I made half regular patties and half sliders- they freeze nicely in ziploc bags.
I did the same process with the large burger patties.
Five pounds of ground beef makes A LOT of burgers and sliders! At least 4 nights of dinners for our family!
Next, I just wrap them up in foil on paper plates and store them in freezer bags for another time.
But since my girls saw all the burger patties, they BEGGED me to fix burgers for dinner that night. Whenever we have burgers, I love to make these Alexia Sweet Potato Fries and Onion Rings to go with. Another BIG time saver!
Alexia fries are also another big favorite around here!
I like to set out a "topping bar" for everyone to fix their burgers how they like them- its fun and yummy!
